Looking for fresh herb ideas

The Dirty Knee Club is planting an herb garden at the cottage. Because of that, I plan to do two presentations in the summer term on use of fresh herbs in sandwiches and salads. We'll have an open kitchen format so that folks can show up and learn how to use the various fresh herbs from our garden. I already have plenty of ideas for these herbs, but can always use a few new ones from cooks who enjoy using them in creative ways in sandwiches and salads. I can't do a cooking with herbs class because I don't have time this summer to tackle a wholesale herb-cooking program.  The herbs being planted are : sage, rosemary, parsley, chives, tarragon, basil, mint, oregano, thyme, and dill.   1. Doris, this herb pesto is delicious on fish . . .

    Combine in food processor:
    1/4 C chopped fresh dill
    1/4 C chopped fresh Italian parsley
    1/4 C chopped fresh mint
    3 T capers
    2 large cloves garlic
    8 small anchovies
    1 T Dijon mustard

    Process until well chopped. With motor running, add 1/4 C olive oil and 2 T fresh lemon juice, and process until fairly smooth.

    This will keep well in the fridge for 2-3 days.

  2. Sandy: Very good recipe and I shall try it for sure. I've decided to locate or dig from my own experience uses for the herbs we are planting for at least two sandwiches and two salads. A pesto can work well, as you know, in a pasta salad, on a simple tomato salad, and maybe as you point out in fish...so maybe fresh tuna or shrimp? or good old salmon? In a sandwich.

    I have two sessions this summer to do this and figure I shall break my list of herbs into five each.I'll need to do a few dry runs on each recipe to see what works before I lay them on those who drop in to the cottage.

    Any other ideas you can offer will be most welcome.
